Ingredients

  • 1/2 cup quinoa, rinsed
  • 1 cup water
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 jalapeno pepper, diced
  • 1 large carrot, peeled and chopped
  • 2 celery stalks, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 medium zucchini, chopped
  • 2 (15 ounce) cans black beans, drained and rinsed
  • 1 (15 ounce) can red kidney beans, drained and rinsed
  • 3 (15 ounce) cans diced tomatoes
  • 1 (15 ounce) can tomato sauce
  • 2-3 tablespoons chili powder, depending on your taste (we used 3)
  • 1 tablespoon ground cumin
  • Salt and black pepper, to taste

Optional toppings: green onions, avocado slices, cheese, sour cream, Greek yogurt, chips, crackers, etc.

Vegetarian "Sausage" and Cheddar Quiche

Ingredients

  • 1 9 inch pre-made pie crust
  • 1/4 package Gimme Lean Sausage
  • 2 cups milk, soy milk or rice milk
  • 3 whole eggs or egg substitute
  • 1/4 cup onion, finely chopped
  • 1/4 cup cheddar cheese or soy cheese
  • nutmeg to taste
  • salt and pepper to taste
  • salsa, optional

Instructions

  1. Bake pie crust according to the package directions and set aside. Saute Gimme Lean Sausage and onions in cooking oil or spray, then transfer to cooled pie shell. Sprinkle cheese or soy cheese over sausage and onions.
  2. Beat milk and eggs, add salt, pepper and nutmeg. Mix together and pour over sausage, onions and cheese.
  3. Serve with a side of salsa, if you'd like. Preheat oven to 375 degrees. Bake for 35 to 40 minutes.

Spicy Black Bean Quinoa Burgers

 

 

 

 

 

 

 

 

Ingredients

  • 1/2 c. dried quinoa
  • 1 can black beans, rinsed and divided in half
  • 1 1/2 tsp. coconut oil
  • 1/2 red onion, small dice
  • 1/2 red pepper, small dice
  • 2 garlic cloves, minced
  • 1 serrano pepper, minced
  • 1 c. spinach
  • Salt and pepper

Instructions

  1. In a small sauce pan combine quinoa with 1 cup of water. Bring to a boil and reduce to a simmer. Turn off the heat when the quinoa is light and fluffy.
  2. In a separate pan on medium heat add coconut oil. Once oil is melted add onions and peppers. Saute.
  3. Add garlic cloves and spinach. Stir frequently so garlic doesn’t burn.
  4. Add 1/2 black beans. Cook 3-5 minutes.
  5. In a food processor add bean mixture and half of the quinoa. Process until smooth.
  6. Transfer pureed bean mixture to a separate bowl. Add the remaining black beans and quinoa.

One Pot Kale and Quinoa Pilaf

 

Yield: Serves 2-4

 

 

 

 

 

 

Ingredients

  • 2 cups salted water
  • 1 cup quinoa
  • 1 bunch lacinato kale, washed and chopped into 1? lengths
  • 1 lemon, zested and juiced
  • 2 scallions, minced
  • 1 tablespoon coconut oil
  • 3 tablespoons toasted pine nuts
  • 1/4 cup crumbled goat cheese
  • salt and pepper

Instructions

  1. Bring the water to a boil in a covered pot. Add the quinoa, cover, and lower the heat until it is just enough to maintain a simmer. Let simmer for 10 minutes, then top with the kale and re-cover. Simmer another 5 minutes, then turn off the heat and allow to steam for 5 more minutes.
  2. While the quinoa is cooking, take a large serving bowl and combine half of the lemon juice (reserving the other half), all of the lemon zest, scallions, walnut oil (you can substitute olive oil if you desire), pine nuts, and goat cheese.
