Ingredients

  • 1 cup finely chopped red onion
  • 1/4 cup thinly sliced fresh basil
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 (1-pound) salmon fillet, skinned and chopped 
  • 1 tablespoon hot pepper sauce
  • 1 large egg white 
  • Cooking spray
  • 8 (3/4-ounce) slices focaccia, toasted

Preparation

  1. Combine first 5 ingredients in a large bowl. Combine hot pepper sauce and egg white in a small bowl; add egg white mixture to salmon mixture, stirring well to combine.

Ingredients

  • 8 (5 ounce) salmon fillets, with skin
  • 1/4 cup olive oil
  • 4 plum tomatoes, diced
  • 1/2 cup crumbled feta cheese
  • 1/4 red onion, diced
  • 1 tablespoon chopped fresh basil
  • 4 kalamata olives, sliced
  • 1 tablespoon lemon juice

Instructions

  1. Preheat an oven to 350 degrees F (175 degrees C).
  2. Brush each salmon fillet with olive oil and arrange into the bottom of a glass baking dish with the skin side facing down. Scatter the tomatoes, feta cheese, onion, basil, and olives over the fillets and sprinkle with lemon juice.
  3. Bake in the preheated oven until the salmon flakes easily with a fork, about 20 minutes.

Grilled Honey-Cilantro Salmon

Ingredients

  • 1 bunch cilantro leaves, chopped
  • 2 cloves garlic, chopped
  • 2 cups honey (locally sourced is preferred)
  • juice from one lime
  • 4 salmon steaks
  • salt and pepper to taste

Instructions

  1. In a small saucepan over medium-low heat, stir together cilantro, garlic, honey, and lime juice. Heat until the honey is easily stirred, about 5 minutes. Remove from heat, and let cool slightly.
  2. Place salmon steaks in a baking dish, and season with salt and pepper. Pour marinade over salmon, cover, and refrigerate 10 minutes.
  3. Preheat an outdoor grill for high heat.
  4. Lightly oil grill grate. Place salmon steaks on grill, cook 5 minutes on each side, or until fish is easily flaked with a fork.

  • 12 ounces fresh skinless salmon fillets, 3/4-inch thick
  • 1/3 cup coarsely chopped fresh oregano
  • 1/3 cup coarsely chopped fresh cilantro
  • 1/4 cup sliced green onion
  • 1 clove garlic
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 teaspoon cayenne pepper (optional)

Instructions

  • Start by rinsing your Salmon fliets and pat dry with paper towels. Cut them into two (6-ounce) pieces and set aside.
