Ingredients

  • 30 small gingersnap cookies, (about 7 1/2 ounces)
  • 2 tablespoon(s) raisins
  • 1 tablespoon(s) canola oil
  • 1 cup(s) canned pumpkin puree
  • 1/3 cup(s) packed brown sugar
  • 1/2 teaspoon(s) ground cinnamon
  • 1/4 teaspoon(s) ground ginger
  • 1/4 teaspoon(s) freshly grated nutmeg
  • 2 cup(s) frozen low-fat vanilla ice cream, softened 

Directions

  1. Preheat oven to 350 degrees F. Coat a 9-inch deep-dish pie pan with cooking spray.

During the fall, Cheekwood turns into an amazing spectacle of festivities.  There's scarecrows, pumpkins, fall activities and more.  Almost every weekend there is something special to see.  This weekend is your chance to check out the best of the Cheekwood Harvest festival series of events.
