Vegetarian "Sausage" and Cheddar Quiche

Ingredients

  • 1 9 inch pre-made pie crust
  • 1/4 package Gimme Lean Sausage
  • 2 cups milk, soy milk or rice milk
  • 3 whole eggs or egg substitute
  • 1/4 cup onion, finely chopped
  • 1/4 cup cheddar cheese or soy cheese
  • nutmeg to taste
  • salt and pepper to taste
  • salsa, optional

Instructions

  1. Bake pie crust according to the package directions and set aside. Saute Gimme Lean Sausage and onions in cooking oil or spray, then transfer to cooled pie shell. Sprinkle cheese or soy cheese over sausage and onions.
  2. Beat milk and eggs, add salt, pepper and nutmeg. Mix together and pour over sausage, onions and cheese.
  3. Serve with a side of salsa, if you'd like. Preheat oven to 375 degrees. Bake for 35 to 40 minutes.

Ingredients

  • Apple rings (1 per eye)
  • Dried Apricots (1/2 per eye)
  • Raisins (1/2 per eye)

Instructions

  1. For each pair of eyes, gently cut out two fresh apple rings.
  2. Carefully slice a dried apricot through the middle so that you end up with two circular halves. Press a half, sticky side down, onto the center of an apple ring, covering the hole.
  3. For pupils, use kitchen scissors to cut a raisin in two, and press the halves, sticky side down, onto the apricots.

Ingredients

  • English muffins
  • Pizza sauce
  • Black olives
  • Scallions
  • Red or green pepper
  • Cheese sticks or slices

Instructions

  1. Heat the oven to 350º F. For each mummy, spread a tablespoon of pizza sauce onto half of an English muffin (toast it first, if you like).
  2. Set olive slices in place for eyes and add round slices of green onion or bits of red or green pepper for pupils.
  3. Lay strips of cheese (we used a pulled-apart cheese stick) across the muffin for the mummy?s wrappings.
  4. Bake for about 10 minutes or until the cheese is melted and the muffin is toasty.
