Grilled Honey-Cilantro Salmon

Ingredients

  • 1 bunch cilantro leaves, chopped
  • 2 cloves garlic, chopped
  • 2 cups honey (locally sourced is preferred)
  • juice from one lime
  • 4 salmon steaks
  • salt and pepper to taste

Instructions

  1. In a small saucepan over medium-low heat, stir together cilantro, garlic, honey, and lime juice. Heat until the honey is easily stirred, about 5 minutes. Remove from heat, and let cool slightly.
  2. Place salmon steaks in a baking dish, and season with salt and pepper. Pour marinade over salmon, cover, and refrigerate 10 minutes.
  3. Preheat an outdoor grill for high heat.
  4. Lightly oil grill grate. Place salmon steaks on grill, cook 5 minutes on each side, or until fish is easily flaked with a fork.

Ingredients

  • 1-2 lbs. carrots
  • 2 Tbsp olive oil
  • 1/4 tsp each salt & pepper
  • 2 Tbsp honey
  • 1/4 cup balsamic vinegar
  • 1 Tbsp Canola oil butter

Instructions

  1. Preheat the oven to 400 degrees. Clean and peel the carrots. Cut the carrots into one-inch sections (cut on a diagonal for more visual appeal).
  2. Cover a baking sheet with foil. Place the carrots on the sheet and drizzle with olive oil and then sprinkle with salt and pepper. Toss the carrots to coat. Place in the oven and roast for 40 minutes, stirring once half way through.

Ingredients

  • 1/2 cup balsamic vinegar
  • 1 tablespoon low sodium soy sauce
  • 3 tablespoons local, organic honey
  • 2 cloves garlic, minced
  • 1/2 teaspoon crushed red pepper flakes
  • 2/3 cup extra-virgin olive oil

Instructions

  1. Place the vinegar, soy sauce, honey, garlic, and red pepper flakes into a blender. Puree on high, gradually adding the olive oil. Blend for 2 minutes, or until thick.
