INGREDIENTS

  • 1 cup Balsamic Vinegrette Dressing
  • 2 pounds skinless, boneless chicken thighs an breasts, trimmed and cut into bite-sized pieces
  • 2 large oranges 
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper

 

PREPARATION

  1. Add 1/2 cup Balsamic Vinegrette Dressing and chicken in a large zip-top plastic bag then seal and marinate in refrigerator 30 minutes.
  2. Prepare grill to medium-high heat.
  3. Cut each orange into 8 wedges; cut each wedge crosswise into 3 pieces.
  4. Remove chicken from marinade. Place chicken and orange pieces alternately onto each of 16 (10-inch) skewers.
  5. Sprinkle evenly with salt, pepper, garlic poweder and cayenne pepper.

Ingredients

  • 2 boneless skinless chicken breast halves (6 ounces each)
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup barbecue sauce, divided
  • 2 teaspoons olive oil
  • 1 medium red onion, thinly sliced
  • 1 pre-made whole wheat pizza dough ball
  • 1 cup shredded Monterey Jack cheese (4 oz) and Reduced fat Mozerella cheese
  • 1/4 cup finely chopped green bell pepper

 

Directions

Ingredients

  • 6 large fresh tomatoes
  • salt and pepper
  • 6 garlic cloves
  • 3 tablespoons extra virgin olive oil
  • 1 -2 ounce parmigiano-reggiano cheese
  • 2 tablespoons fresh thyme leaves, to taste

Instructions

  1. Cut your tomatoes in half crosswise, season with salt and pepper.
  2. In a small frying pan add crushed garlic, olive oil and fresh thyme, cook til golden, take off the heat and add in grated parmigiano-reggiano cheese.
  3. Place your tomato halves cut side down on and oiled grill until you get grill marks, then turn them over with tongs and spoon the garlic cheese mixture on top and continue cooking.

Ingredients

  • 3 tablespoons soy sauce
  • 3 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon garlic powder
  • 8 skinless, boneless chicken breast halves - cut into 2 inch pieces
  • 1 (20 ounce) can pineapple chunks, drained
  • skewers

Instructions

  1. In a shallow glass dish, mix the soy sauce, brown sugar, sesame oil, ginger, and garlic powder. Stir the chicken pieces and pineapple into the marinade until well coated. Cover, and marinate in the refrigerator at least 2 hours.
  2. Preheat grill to medium-high heat.
  3. Lightly oil the grill grate. Thread chicken and pineapple alternately onto skewers. Grill 15 to 20 minutes, turning occasionally, or until chicken juices run clear.
