Gluten-Free Whole Grain Raspberry Lemon Pancakes

Ingredients:

  • 1 chia “egg” (1 tablespoon of chia seeds mixed with 3 tablespoons water, allowed to set for 10 minutes) 
  • 2 tablespoons freshly-squeezed lemon juice 
  • ½ cup almond milk 
  • ½ teaspoon almond extract 
  • 1 tablespoon maple syrup, honey or coconut nectar 
  • ¼ cup plus 2 tablespoons gluten-free rolled oats (or a generous ¼ cup gluten-free oat flour) 
  • ¼ cup plus 2 tablespoons brown rice flour (you could try subbing whole wheat pastry flour, spelt flour or another gluten-free flour) 
  • ½ teaspoon lemon zest 
  • ¼ teaspoon baking soda 
  • ¼ teaspoon sea salt 
  • 1/3 cup frozen organic raspberries, plus more for garnish (you could use fresh)

Ingredients

  • 6 peeled, thinly sliced Yukon gold or russet potatoes
  • 1/4 cup (1/2 stick) cubed butter or dairy free butter substitute
  • 2 tablespoons finely minced fresh parsley OR a combination of parsley, thyme and savory
  • 2 - 2 1/2 cups milks or dairy free milk substitute (more if needed to cover potatoes)
  • 3 tablespoons sweet rice flour
  • 1 1/2 - 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1/2 cup shredded Cheddar cheese
  • 1 cup cubed cooked gluten-free ham (optional)
  • 1/4 teaspoon smoked paprika (optional)

Instructions

  1. Preheat oven to 350° F / 176° C

Ingredients

  • 4 c. oats (Make sure they are certified gluten free)
  • 2 c. nuts- chopped almonds and walnuts (or andy kind you prefer)
  • 1 T. cinnamon
  • 2 t. sea salt
  • 1 1/2 c. dried fruit- cranberries, blueberrries, etc
  • 3/4 c. honey
  • 2 T. unrefined coconut oil

Instructions

  1. Preheat oven to 350 degrees.
  2. Mix all ingredients together in a large bowl, then spread on a sheet pan that is lined with parchment or a silpat.
  3. Cook for about 15 minutes and stir. Continue cooking about 15 minutes until golden brown and slightly crunchy.
